There’s intimate dining and then there’s Underbar, Ballarat’s newest upscale culinary destination. Seating just 20 and only open on Friday and Saturday nights, Underbar is the brainchild of head chef Derek Boath – formerly of New York’s three-Michelin starred Per Se.

Sound like a crazy idea? It sure is, but with a chef’s hat from the Good Food Guide, visiting foodies and locals are lining up. Book well in advance and then take your place on the long table (there’s only one!). The tasting menu changes weekly, showcasing the very best of Ballarat’s local farms and gourmet producers.
